Product Description

The aroma and flavor of wasabi are determined by how it's grated.

Chojiro's shark skin grater uses "real shark skin,"
which sushi chefs have used for generations.
It brings out the original aroma and smooth texture of genuine wasabi.

【Why Shark Skin?】

Metal graters crush the fibers of wasabi.
As a result, the aroma is lost, and only the spiciness remains.

On the other hand, shark skin "cuts" the fibers without crushing them, which results in:
・Enhanced aroma
・Reduced bitterness
・Smooth texture

This is why chefs choose shark skin.

【Features of Kyori】

Each grater is meticulously handcrafted by artisans using carefully selected genuine shark skin.

Its rounded shape fits comfortably in the hand, allowing you to grate incredibly finely with surprising ease. It preserves the rich aroma and invigorating spiciness inherent to wasabi, elevating your everyday dishes to a higher level of taste.

It's characterized by a consistent grating feel and finish
that mass-produced products cannot achieve.

 【How it Changes Your Food】

Even with the same real wasabi, grating it with shark skin makes a complete difference in taste.

Not only for sashimi, but also for soba, chilled tofu, steak, etc.,

the overall impression of the dish becomes much more refined.

【Size and Ease of Use】

Unlike household sizes "small, medium, large",

the handle is longer, making it easier to grate.

The "Ultra-Extra Large" size is a professional specification for those who frequently need to grate large amounts of condiments.

It offers excellent work efficiency and can handle large ingredients.

【Recommended for】

・Those who want to truly savor real wasabi
・Those who want to elevate the quality of their cooking
・Those looking for authentic tools that last

Simply changing your tools can transform your dining experience to this extent.

Please experience for yourself "why shark skin" makes a difference.

How to grate fresh wasabi
1: Cut off the leafy part
2: Roughly scrape off any bumps
3: Wash with a scrubbing brush
4: Grate in a circular motion, starting from the leafy end

Tips
・Apply light pressure and grate slowly in a circular motion, like drawing the character "no" (の).
When it becomes a fine, sticky, creamy paste, your delicious wasabi is ready.

・Can be used not only for wasabi but also for vegetables like green onions and carrots, and fruits like apples.
The ingredients melt like snow, becoming a light mousse-like consistency between pulp and juice,
so adding it just before serving can impart a pleasant aroma and a refreshing sensation.

【Precautions】
●The color may appear different from the actual product depending on your monitor.

●After each use, rinse quickly with water and dry in the shade.
If the grater board remains wet and is used continuously multiple times a day,
the skin may become damp and peel off easily.
Soaking in hot or cold water or drying in direct sunlight can cause peeling.
Do not soak in water or hot water.

●If the wood and shark skin remain moist for a long time every day, the shark skin or wood may be damaged.
Also, after drying, the wood part may crack or warp.
Occasionally let the shark skin grater board rest and dry in the shade.

●Genuine shark skin is a natural, high-quality skin, and the texture may vary slightly in different areas.

★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
