Product Description

The aroma and flavor of wasabi are determined by "how it's grated".

Chojiro's shark skin grater uses "real shark skin",
which sushi chefs have continued to use.
It brings out the original aroma and smooth texture of real wasabi.

【Why shark skin?】

Metal graters crush the fibers of wasabi.
As a result, the aroma is lost, and only the pungency stands out.

On the other hand, shark skin "cuts" the fibers without crushing them, allowing for:
・Enhanced aroma
・Reduced bitterness
・Smooth texture

This is why chefs choose shark skin.

【Features of Kyori】

Each grater is carefully crafted by artisans using carefully selected genuine shark skin.

Its rounded shape makes it comfortable to hold, and it grates surprisingly finely with light pressure. It preserves the rich aroma and invigorating pungency inherent in wasabi, elevating your everyday dishes to a higher level of flavor.

It features stable grating comfort and a finish that cannot be achieved with mass-produced items.

【How it changes your cooking】

Even with the same real wasabi, grating it with shark skin makes a complete difference in taste.

It tightens the overall impression of dishes like sashimi, soba noodles, cold tofu, and steak.

【Size and ease of use】

Unlike household sizes "small, medium, large",

the handle is longer, making it easier to grate.

The "extra-large" size is a professional specification for those who frequently need to grate large quantities of condiments.

It offers excellent work efficiency and can handle large ingredients.

【Recommended for】

・Those who want to fully savor real wasabi
・Those who want to elevate the quality of their cooking
・Those looking for a genuine tool that will last a long time

Just by changing your tools, your culinary experience can change this much.

Please try for yourself to experience "why shark skin" is superior.

How to grate fresh wasabi
1: Scrape off the leafy part
2: Roughly trim off any bumps
3: Wash with a scrubbing brush
4: Grate from the leafy end in a circular motion

Tips
・Do not apply too much force; grate slowly in a circular motion, like drawing the hiragana character "no".
When it becomes a fine, sticky, creamy paste, delicious wasabi is ready.

・Can be used not only for wasabi but also for vegetables like green onions and carrots, and fruits like apples.
The ingredients melt like snow, becoming a light mousse-like consistency, halfway between pulp and juice.
Adding it just before serving can impart a pleasant aroma and refreshing sensation.

【Precautions】
●Depending on your monitor, the actual product may look different.

●After each use, rinse quickly with water and dry in the shade.
If the grater remains wet and is used repeatedly throughout the day,
the skin may become steamed and peel off easily.
Soaking in hot or cold water, or drying in direct sunlight, can also cause peeling.
Do not soak in water or hot water.

●If the wood and skin contain a lot of moisture daily for a long time, the shark skin or wood may be damaged.
Also, after drying, the wood part may crack or warp.
Occasionally let the shark skin grater rest and dry it in the shade.

●Genuine shark skin is a natural, high-quality leather, and the texture may vary slightly in some areas.

★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
