Product Description

The aroma and umami of wasabi are determined by "how it's grated."

Chojiro's shark skin grater uses "real shark skin,"
which sushi chefs have used for generations.
It brings out the original aroma of real wasabi and its smooth texture.

【Why shark skin?】

Metal graters crush the fibers of wasabi.
As a result, the aroma dissipates, and only the pungency remains.

On the other hand, shark skin "cuts" the fibers without crushing them, which means:
・The aroma stands out
・Less bitterness
・Smooth texture

This is why chefs choose shark skin.

【Features of Kyori Byo Dome】

Reproducing the craftsmanship of the late Edo period, where real shark skin was fastened with rivets.
Each grater is handcrafted by artisans using carefully selected real shark skin.

Its rounded shape fits comfortably in the hand, and it can grate astonishingly finely with light pressure. It preserves the rich aroma and stimulating pungency inherent in wasabi, elevating your everyday dishes to a higher level.

Unlike mass-produced items,
it features stable grating performance and a high-quality finish.

 【How it changes your cooking】

Even with the same real wasabi, grating it with shark skin completely changes the taste.

It tightens the impression of the entire dish, not just sashimi, but also soba, hiyayakko (cold tofu), steak, and more.

【Size and ease of use】

Unlike household sizes "small, medium, and large,"

it has a longer handle, making it easier to grate.

The "Super Extra Large" size is professional-grade, for those who frequently need to grate large quantities of condiments.

It offers excellent work efficiency and can handle large ingredients.

【Recommended for】

・Those who want to truly savor real wasabi
・Those who want to elevate the quality of their cooking
・Those looking for authentic tools that last a long time

Just changing your tools can transform your dining experience this much.

Please experience for yourself "why shark skin" makes a difference.

How to Grate Fresh Wasabi
1: Shave off the leaf part
2: Roughly scrape off the bumps
3: Wash with a scrubbing brush
4: Grate in a circular motion, starting from the leafy end

Tips
・Grate slowly in a circular motion, without applying too much force.
When it becomes a fine, sticky, creamy paste, delicious wasabi is ready.

・Can be used not only for wasabi, but also for vegetables like green onions and carrots, and fruits like apples.
The ingredients melt like snow, becoming a light mousse-like consistency, halfway between pulp and juice.
Adding it just before serving can impart a pleasant aroma and refreshing sensation.

【Precautions】
●The color may appear different from the actual product depending on your monitor.

●After use, rinse quickly with water and air dry in the shade.
If the grater is used repeatedly multiple times a day while still damp,
the skin may become steamed and peel off easily.
Soaking in hot or cold water, or drying in direct sunlight, can cause peeling.
Do not soak in water or hot water.

●If the wood and skin retain a lot of moisture for a long time every day, the shark skin or wood may be damaged.
Also, after drying, the wood may crack or warp.
Occasionally rest the shark skin grater and air dry it in the shade.

●Real shark skin is a natural, premium material, and the texture may vary slightly in some areas.

★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
