Product Description

The aroma and flavor of wasabi are determined by how it's grated.

Chojiro's shark skin grater uses "real shark skin,"
which sushi chefs have used for generations.
It brings out the authentic aroma and smooth texture of real wasabi.

【Why Shark Skin?】

Metal graters crush the fibers of wasabi.
As a result, the aroma is lost, and only the spiciness remains.

Shark skin, on the other hand, "cuts" the fibers without crushing them, resulting in:
・Enhanced aroma
・Reduced off-flavors
・Smooth texture

This is why chefs choose shark skin.

【Features of Kyori-byo Grater】

We've recreated the craftsmanship of the late Edo period, when genuine shark skin was fastened with rivets.
Each grater is handcrafted by artisans using carefully selected genuine shark skin.

Its rounded shape fits comfortably in the hand, allowing you to grate surprisingly finely with light pressure. By preserving the rich aroma and stimulating spiciness inherent in wasabi, your everyday dishes will be elevated to a new level of flavor.

It offers a stable grating experience and finish
that cannot be achieved with mass-produced items.

【How will it change your cooking?】

Even with the same real wasabi, grating it with shark skin makes a complete difference in taste.

Not just for sashimi, but for soba, cold tofu, steak, and more,

it will elevate the overall impression of your dishes.

【Size and Ease of Use】

Unlike household sizes "small, medium, large,"

this grater has a long handle, making it easier to grate.

The "extra large" size is professional-grade, for those who frequently need to grate large quantities of condiments.

It's highly efficient and can handle large ingredients.

【Recommended for】

・Those who want to truly savor real wasabi
・Those who want to elevate the quality of their cooking
・Those looking for authentic tools that will last

Changing your tools alone can transform your dining experience.

Please experience "why shark skin" with your own palate.

How to Grate Fresh Wasabi
1: Scrape off the leafy part
2: Roughly shave off any bumps
3: Wash with a brush
4: Grate in a circular motion, starting from the leafy end

Tips
・Without applying too much force, slowly grate in a circular motion, like drawing the character "no".
When it becomes a fine, sticky, creamy paste, delicious wasabi is ready.

・Can be used not only for wasabi, but also for vegetables like green onions and carrots, and fruits like apples.
The ingredients will melt like snow, becoming a light mousse-like consistency between pulp and juice.
Adding it just before serving will impart a pleasant aroma and refreshing sensation.

【Precautions】
●Colors may appear different from the actual product depending on your monitor settings.

●After each use, rinse quickly with water and dry in the shade.
If the grater remains wet and is used continuously multiple times a day,
the skin may become damp and peel off easily.
Soaking in hot or cold water, or drying in direct sunlight, can cause peeling.
Do not soak in water or hot water.

●If the wood and skin remain highly moist for a long time every day, the shark skin and wood may be damaged.
Also, after drying, the wood may crack or warp.
Occasionally rest the shark skin grater and dry it in the shade.

●Genuine shark skin is a natural, premium material, and the texture may vary slightly in different areas.

★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
