Product Description

The aroma and flavor of wasabi are determined by how it is grated.

Chojiro's shark skin grater uses "real shark skin," which sushi chefs have been using for a long time. It brings out the original aroma of real wasabi and its smooth texture.

【Why shark skin?】

Metal graters crush wasabi fibers, which results in the aroma dissipating and only the spiciness remaining.

In contrast, shark skin "cuts" the fibers without crushing them, leading to: ・Enhanced aroma ・Less bitterness ・Smooth texture

This is why chefs choose shark skin.

【Features of Kyori-byoshikiri】

It reproduces the craftsmanship of the late Edo period, where real shark skin was fastened with rivets. Each grater is handcrafted by artisans using carefully selected real shark skin.

Its rounded shape fits comfortably in the hand, allowing you to grate astonishingly finely with light pressure. It preserves the rich aroma and stimulating spiciness inherent in wasabi, transforming everyday dishes into a higher-quality taste.

It features a stable grating experience and finish that cannot be achieved with mass-produced items.

【How it changes your cooking】

Even with the same real wasabi, grating it with shark skin completely changes the taste.

It tightens up the overall impression of dishes, not just sashimi, but also soba, cold tofu, steak, and more.

【Size and ease of use】

The "small" size is a trial size. It's an easy-to-handle size for small families or those who grate small amounts of condiments.

It's also suitable for first-time users of shark skin graters.

【Recommended for people who】

・Want to fully savor real wasabi
・Want to elevate the quality of their cooking
・Are looking for authentic tools that can be used for a long time

Just changing your tools can transform your culinary experience this much.

Please experience for yourself "why shark skin" makes a difference.

How to Grate Fresh Wasabi
1: Scrape off the leafy part
2: Roughly trim off the knob
3: Wash with a scrubbing brush
4: Grate in a circular motion, starting from the leafy end

Tips
・Grate slowly in a circular "no" shape without applying too much force. When it becomes finely textured and sticky like cream, delicious wasabi is ready.

・It can be used not only for wasabi but also for vegetables like green onions and carrots, and fruits like apples. The ingredients will melt like snow, becoming a light mousse-like texture between pulp and juice. By adding it just before serving, you can impart a pleasant aroma and refreshing sensation.

【Precautions】
●The appearance may differ from the actual product depending on your monitor.

●After each use, quickly rinse with water and dry in the shade. If the grater is used continuously multiple times a day while still damp, the skin may become moist and peel off easily. Soaking it in hot or cold water, or drying it in direct sunlight, can cause peeling. Do not soak in water or hot water.

●If the wood and skin remain damp for a long time each day, the shark skin or wood may be damaged. Also, after drying, the wooden part may crack or warp. Occasionally, let the shark skin grater rest and dry it in the shade.

●Real shark skin is a natural, high-quality material, and the texture may vary slightly in some areas.

★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
