Product Description

The aroma and flavor of wasabi are determined by "how it's grated."

Chojiro's shark skin grater uses "real shark skin,"
which sushi chefs have continued to use.
It brings out the original aroma of real wasabi and its smooth texture.

【Why shark skin?】

Metal graters crush the fibers of wasabi.
As a result, the aroma is lost, and only the spiciness stands out.

On the other hand, shark skin "cuts" the fibers without crushing them, so
・The aroma stands out.
・Less unwanted flavor.
・Smooth texture.

This is why chefs choose shark skin.

【Features of Kyori-Byo Dome】

It replicates the craftsmanship from the late Edo period, where real shark skin was fastened with rivets.
Each piece is meticulously crafted by artisans using carefully selected real shark skin.

Its rounded shape fits comfortably in your hand, allowing you to grate with surprising fineness and light pressure. It preserves the rich aroma and stimulating spiciness of wasabi, elevating your everyday dishes to a higher level of taste.

It is characterized by a stable grating feel and finish
that cannot be achieved with mass-produced products.

 【How it changes things】

Even with the same real wasabi, grating it with shark skin completely changes the taste.

From sashimi to soba, chilled tofu, steak, etc.,

the overall impression of your dishes will be enhanced.

【Size and ease of use】

The "large" size is recommended for families with many members or those who use it frequently.

It is also recommended for those who grate a lot of condiments at once.

Even those using a shark skin grater for the first time can easily incorporate it.

【Recommended for】

・Those who want to truly savor real wasabi
・Those who want to elevate the quality of their cooking
・Those looking for authentic tools that can be used for a long time

Simply changing your tools can transform your dining experience this much.

Please experience for yourself "why shark skin" makes such a difference.

How to grate fresh wasabi
1: Scrape off the leafy part
2: Roughly remove the knobby parts
3: Wash with a scrubbing brush
4: Grate in a circular motion starting from the leafy end

Tips
・Grate slowly in a circular "no" shape without applying too much force.
When it becomes finely textured and sticky like cream, delicious wasabi is ready.

・It can be used not only for wasabi but also for vegetables such as green onions and carrots, and fruits such as apples.
The ingredients melt like snow, becoming a light mousse-like consistency between pulp and juice,
so adding it just before serving can impart a pleasant aroma and refreshing sensation.

【Precautions】
●The color may appear different from the actual product due to monitor display.

●After each use, rinse quickly with water and dry in the shade.
If the grater plate is left damp and used repeatedly many times a day,
the skin may become steamy and peel off easily.
Soaking it in hot or cold water, or drying it in direct sunlight, can cause peeling.
Do not soak it in water or hot water.

●If the wood and skin remain excessively moist for a long time every day, the shark skin or wood may be damaged.
Also, after drying, the wood part may crack or warp.
Occasionally let the shark skin grater plate rest and dry in the shade.

●Genuine shark skin is a natural, high-quality material, and the texture may vary slightly in some areas.

★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
