Product Description
The aroma and umami of wasabi are determined by "how it's grated." Chojiro's shark skin grater uses "real shark skin," which sushi chefs have continued to use. It brings out the original aroma and smooth texture of genuine wasabi. 【Why shark skin?】 Metal graters crush the fibers of wasabi. As a result, the aroma disappears, and only the pungency remains. On the other hand, shark skin "cuts" the fibers without crushing them, leading to: ・Enhanced aroma ・Less bitterness ・Smoother texture This is why chefs choose shark skin. 【Features of Chojiro】 Chojiro uses carefully selected genuine shark skin, with each piece finished by hand by craftsmen. It features a consistent grating feel and finish that cannot be achieved with mass-produced items. 【How it changes your experience】 Even with the same genuine wasabi, grating it with shark skin completely transforms the taste. Not only for sashimi, but also for soba, cold tofu, steak, and more, the overall impression of the dish is significantly enhanced. 【Size and ease of use】 Unlike household sizes of "small, medium, large," the handle is longer, making it easier to grate. The "extra-large" size is a professional specification, necessary for grating large quantities of condiments frequently. It offers excellent work efficiency and can handle large ingredients. 【Recommended for】・Those who want to truly savor genuine wasabi ・Those who want to elevate the quality of their cooking ・Those looking for authentic tools that can be used for a long time Simply changing your tools can transform your dining experience to this extent. Please experience "why shark skin" for yourself.
How to Grate Fresh Wasabi
1: Scrape off the leaves 2: Roughly peel off the bumps 3: Wash with a scrubbing brush 4: Grate in a circular motion starting from the leaf end Tips ・Grind gently in a circular motion without applying too much force. The wasabi is perfectly grated when it becomes a fine, sticky, creamy paste. ・Can be used for vegetables like green onions and carrots, as well as fruits like apples, in addition to wasabi. The ingredients melt like snow, forming a light mousse-like consistency between pulp and juice. Adding it right before serving can impart a pleasant aroma and refreshing sensation.

【Precautions】
●The appearance may differ from the actual product due to monitor display. ●After each use, rinse quickly with water and air dry in the shade. If the grater retains moisture and is used repeatedly multiple times a day, the skin may become damp and peel off easily. Soaking it in hot or cold water or drying it in direct sunlight may also cause peeling. Do not soak in water or hot water. ●If the wood and skin retain excessive moisture daily for an extended period, the shark skin or wood may be damaged. Also, after drying, the wood may crack or warp. Occasionally, let the shark skin grater rest and air dry in the shade. ●Genuine shark skin is a natural, high-grade material, and the grain may vary slightly in places. ★If you use it frequently, using two shark skin graters alternately is the secret to making them last longer.
