1. Introduction: What is the Chojiro-saku Samegawa Oroshi (Shark Skin Grater)?
Are you familiar with the Samegawa Oroshi, a wasabi grater?
The Samegawa Oroshi was created as a tool to finely grate wasabi, inspired by the shark skin that townspeople and chefs in the late Edo period used for finishing wood surfaces for palace carpenters.
Shark skin actually refers to the skin of a ray, and it is characterized by its surface being covered with tough granules called "dermal denticles," which are made of enamel, just like human teeth. It has long been used as a material for wasabi graters.
When wasabi is grated with a Samegawa Oroshi, the cells are finely crushed, resulting in a sticky grated wasabi with a rich pungency.
Historically, the Samegawa Oroshi was developed and popularized as a wasabi grater, but it can also be used to grate ginger, garlic, other vegetables, and fruits.
And the Chojiro-saku Samegawa Oroshi is a product that World Vision Co., Ltd. has restored and commercialized, based on the traditional Edo period cooking utensil, the samegawa wasabi grater.
2. A Variety of Models with Different Materials and Shapes

The Chojiro-saku Samegawa Oroshi mainly consists of two parts: the base block and the shark skin, and there are various models depending on the shape and material combination of the base block.
The wooden shapes include square shapes like a hagoita (battledore) and rounded shapes like a uchiwa (fan) or shamoji (rice paddle), and various types of wood are used for the material, with some models also made of ceramic.

3. About the "Oninamida Model"
While there are various models, on this page, we will briefly introduce the features of the Oninamida model.

The Oninamida model is a product born from a collaboration between the "Oninamida" grater, Fuji Wasabi Farm, and Custom Cool Center. Similar to the Rokyu, it has a battledore-like shape and uses ebony for the base block. Instead of shark skin, it features a stainless steel grating surface that replicates the grating feel of shark skin.
